Ingredients

3 tbsp light olive oil

1 large onion, sliced

1/4 tsp dried parsley

1/4 tsp dried cumin

1/4 tsp cayenne pepper

2 peppers (yellow and red), de-seeded and sliced

4 tomatoes, chopped

2 tsp brown sugar

2 tsp chopped thyme leaves

Pinch of saffron (optional)

4 eggs

2 tbsp chopped coriander

Crusty bread, to serve

Method

Heat the oil in a large pan, add the onion and cook for 2 minutes. Add the parsley, cumin and cayenne, and cook for 1 minute. Add the peppers, tomatoes, sugar, thyme and saffron, if using.

Add 8 tbsp water and simmer for 15 minutes, adding a little more water if too thick.

Make 4 gaps in the sauce and crack an egg into each one. Cover and cook for 10-12 minutes, until the eggs are just set. Top with coriander and serve with bread.
