Ingredients

4 tbsp Asda Ginger Preserve

4 tbsp no-bits apricot jam

2 tbsp lemon juice

2 tbsp caster sugar

1 vanilla pod

2 star anise

6 large nectarines

Method

Put the ginger preserve, apricot jam, lemon juice, sugar and 400ml water in a pan just large enough to hold the nectarines in a single layer. Heat slowly, stirring occasionally, until the ginger preserve and apricot jam have melted. Split the vanilla pod and scrape the seeds into the pan. Add the pod and star anise.

Put the whole nectarines in the pan and add a little water if necessary, to just cover the fruit. Cover the pan and simmer very gently for 5-6 minutes.

Using a draining spoon, lift out the nectarines and put them in a serving dish. Boil the syrup, uncovered, until thick and syrupy and reduced to about 350ml, then pour over the nectarines and leave to cool.
