Ingredients

75g unsalted butter

10 Asda Whole Cardamoms

100g Asda White Chocolate

175g butter, softened

175g caster sugar

3 large eggs

½ small orange, finely grated zest of

175g self-raising flour

75g dessicated coconut

3 tbsp milk

300g Asda White Chocolate

2 tbsp icing sugar

Method

Pre-heat the oven to 160C/140C Fan/Gas 3. Put 8 mini loaf cases on a baking tray. Split the cardamom pods and remove the seeds. Crush the seeds in a pestle and mortar or small bowl with the end of a rolling pin.

Break the chocolate into squares in a bowl. Put over a pan of simmering water until just melted, ensuring the base doesn't touch the water. Remove the bowl. Leave until the chocolate is cold but still liquid.

Beat the butter and caster sugar together. Beat in the eggs one at a time, then the zest and crushed seeds.

Gently stir in the flour, coconut and milk. Put in the cases and level the tops. Bake for 30 minutes or until the tops spring back. Cool.

For the icing, put the butter and chocolate in a bowl and melt as in step 2. Stir in the icing sugar and spread or pipe on top of the cake. Decorate with mini eggs.
