Ingredients
3 aubergines
3 courgettes
5 tbsp olive oil
75g feta cheese, crumbled
50g pine nuts, toasted
Method
1Cut the stems from the aubergines and courgettes and discard.
2Cut the aubergines lengthways into 5 thick slices and cut each courgette into 4 long slices.
3Brush the slices with oil on both sides. Barbecue or grill until tender and golden brown.
4To serve, pile the grilled vegetables on a plate and sprinkle with the crumbled feta and toasted pine nuts.
