Mini baked potatoes

Ingredients

750g bag Asda Baby Pearl Potatoes, washed

4 tbsp milk

125g mature Cheddar, grated

185g can Asda Tuna Chunks in Spring Water, drained and flaked

125g frozen sweetcorn

4 rashers streaky bacon

Method

Pre-heat the oven to 200C/180C Fan/Gas 6. Prick the potatoes with a fork, put on a baking tray and bake for 45-50 minutes until soft in the middle when pierced with a skewer.

Cut the potatoes in half and scoop out the flesh with a teaspoon. Mash with the milk. Put the shells, hollow side up, on baking trays. Divide the mash in two and stir 75g of the cheese into one half.

Add the rest of the cheese and the tuna to the other half of the mash. Boil the sweetcorn for 4 minutes, then drain. Stir into the tuna potato.

Fill half the shells with the tuna mixture and half with the cheese mixture. Grill the bacon until crisp. Crumble into pieces and sprinkle on top of the cheese potatoes.

Bake for 10-15 minutes until tinged brown and hot.
