Ingredients

375g Asda Ready to Roll Puff Pastry

Flour, for rolling out

200g Asda Full Fat Soft and Creamy Cheese

1 medium free-range egg

A few drops of vanilla extract

1 tbsp icing sugar

5 nectarines

25g pine nuts

4 tbsp no-bits apricot jam

Method

Pre-heat the oven to 200C/180C Fan/Gas 6. Roll out the pastry on a lightly floured surface to a 30cm x 21cm rectangle. Put on a baking tray lined with greaseproof paper and with a knife mark a 2cm rim round the edge. Mark the rim to decorate and prick the rest of the pastry. Bake for 10 minutes, then remove from the oven and reduce the heat to 180C/160C Fan/Gas 4.

In a bowl, beat the soft cheese, egg, vanilla and sugar. Slice the nectarines. Spread the cheese mixture on the pastry and neatly arrange the fruit on top. Bake for 18-20 minutes. Scatter the pine nuts on a separate baking tray and bake for the last 5 minutes. Melt the jam, then brush over the fruit and scatter the pine nuts over the top.
