Ingredients

50g Chosen by you Salted Popcorn

125g day-old bread

2 level tsp paprika

480g pack Butcher’s Selection Turkey Breast Steaks

2 large eggs

3 medium sweet potatoes

1/2 tsp mixed dried herbs

1 tbsp olive oil

Salad, to serve

Ketchup, to serve

Method

Line two baking trays with paper. Blitz the popcorn and bread into fine crumbs in a processor. Mix in the paprika and a little cracked black pepper.

Cut the turkey breasts into bite-sized cubes. Lightly beat the eggs in a shallow bowl. Put the popcorn breadcrumbs on a plate.

Dip the turkey cubes in the egg mixture, to cover, then dip in the crumbs, to coat. Layer the coated turkey on one of the baking trays, then chill.

Pre-heat the oven to 200C/180C Fan/Gas 6. Cut the sweet potatoes into wedges and toss with the herbs and oil. Put on the other baking tray and bake in the oven for 30-35 minutes. Add the turkey for the last 25 minutes. Serve with salad and ketchup.
