Ingredients

2 whole sea bass, gutted

1 pak choi, halved or quartered

1 red chilli, de-seeded and finely sliced

Spring onions, trimmed and sliced

1 tbsp soy sauce

1 tbsp sweet chilli sauce

Lemon juice

Method

Pre-heat the oven to 190C/170C Fan/Gas 5. Descale the sea bass if necessary, then remove the head, fins and tail. Rinse and pat dry.

Cut a large square of foil or baking parchment and put the fish on top. Add the other ingredients and make a parcel, sealing the edges tightly but leaving room inside for the air to circulate. Put in a roasting tin and bake for 20 minutes.
