Ingredients

220g pack Extra Special Baby Plum Tomatoes

1 tbsp olive oil

2 tsp balsamic vinegar

Few sprigs thyme

Method

Pre-heat the oven to 140C/120C Fan/Gas 1. Line a baking tray with baking paper. Cut the baby plum tomatoes in half lengthways and put on the baking tray, cut-side up.

Mix together the olive oil and balsamic vinegar, and drizzle over the tomatoes. Season with salt and black pepper.

Cook in the oven for 45-60 minutes until shrunken. The smallest tomatoes may be ready first – if so, remove them from the baking tray and leave the rest to finish cooking.

Remove from the oven, toss with sprigs of fresh thyme and leave to cool.
