Ingredients

4 tbsp cider vinegar

1 tbsp caster sugar

326g can Asda Smart Price Sweetcorn

½ chilli (de-seeded & finely chopped)

½ pointed sweet red pepper (de-seeded & chopped)

1 tsp cornflour

Method

Gently heat the cider vinegar and caster sugar in a small pan until the sugar dissolves. Add the sweetcorn (including the liquid), chilli, pepper and 6 tbsp water. Simmer, uncovered, for 5 minutes.

Mix 1 level tsp cornflour with 2 tbsp cold water and stir into the sweetcorn. Heat until simmering, then turn into a bowl and leave to cool.
