300g can Asda Adzuki Beans

4 sun-dried tomatoes from a jar, drained

4 sprigs flat-leaf parsley

75g fresh breadcrumbs

1 tsp oil from the sun-dried tomatoes jar

2 tbsp Asda Sweet Chilli Sauce

1 tbsp Asda Extra Special Caramelised Onion Chutney

Olive oil, for brushing

4 burger buns

Lettuce, to serve

Tomato, to serve

Ketchup, to serve

Method

1
Pre-heat the oven to 190C/170C Fan/Gas 5.
2
Drain the beans through a sieve and rinse well under the cold tap. Put them in a large bowl and mash with a potato masher.
3
Cut the sun-dried tomatoes and flat-leaf parsley sprigs into small pieces with scissors. Add to the mashed beans, along with the fresh breadcrumbs, the oil from the sun-dried tomatoes jar, the sweet chilli sauce and the caramelized onion chutney.
4
Season to taste with salt and pepper. Stir together with a spatula or wooden spoon, then finish mixing with your hands.
5
Line a baking tray with baking paper. Shape the bean mixture into four flat cakes, using your hands, and put on the baking paper.
6
Brush the tops with olive oil and cook in the oven for 15 minutes. Serve in burger buns with lettuce, tomato and ketchup.
