Ingredients

1 tbsp sunflower oil

1 small onion, chopped

250g frozen peas, cooked and drained

2 slices of ham, chopped

6 large eggs

75g mature Cheddar, grated

Method

Heat the oil in a 21-22cm nonstick frying pan. Add the onion and cook over a low heat, until soft.

Add the peas and ham. Cook until heated through.

Beat the eggs together, stir in most of the cheese and season with pepper. Pour the egg into the pan. Stir to distribute the peas, ham and onions evenly.

Cook over a low heat for about 15 minutes, until the base is set but there's still a film of liquid egg on top.

Heat the grill. Slide the frittata onto a baking tray and top with the rest of the cheese. Grill for 2-3 minutes until the top is golden and the egg is set. Delicious eaten hot or cold.
