Ingredients

1 tbsp sunflower oil

1 onion, finely sliced

1 red pepper, de-seeded and sliced

2 x 300g cans Asda Maris Piper Potatoes, drained and sliced

6 large free-range eggs

75g mature Cheddar, grated

Green salad, to serve

Method

Heat the oil in a non-stick frying pan and fry the onion and the pepper for about 5 minutes.

Add the potatoes and sweetcorn. Fry for another 3-5 minutes or until hot.

Pre-heat the grill (if you have one). Beat the eggs and add seasoning and the cheese. Pour over the potato mixture. As the egg starts to set, lift up the edges to allow the uncooked egg to flow underneath. Cover and cook over a low heat for 5-6 minutes or until the egg is almost set.

Place under the grill until the cheese has melted. Or slide the tortilla on to a plate and place another plate on top. Turn over, slide back into the pan and cook for another 2-3 minutes. Serve in wedges with a green salad.
