Ingredients

12 cake cases

115g butter, softened

115g Asda Self-Raising Flour

1 level tsp baking powder

115g caster sugar

2 Asda Large Eggs

1 lime, zest of

50g unsalted butter, softened

100g icing sugar

2-3 tsp lime juice

Few drops Asda Extra Special Vanilla Extract

Few drops Asda Green Natural Food Colouring

Method

Pre-heat the oven to 180C/160C Fan/Gas 4. Put 12 cake cases in a bun tin.

Beat the butter until creamy. Sift the self-raising flour and baking powder into the bowl. Add the caster sugar, eggs and lime zest and beat well. Spoon into the cake cases and bake for 20 minutes or until the tops of the cakes spring back when lightly pressed. Leave to cool on a wire rack.

For the icing, beat the unsalted butter with the icing sugar, lime juice and vanilla extract until light and creamy. Add the food colouring, mix together well and spread or pipe onto the cakes.
