Roasted vegetable quesadillas

Ingredients

1 aubergine

2 courgettes

2 red peppers (or yellow peppers), quartered and de-seeded

1 red onion

3 tbsp olive oil

125g baby-plum tomatoes

1 tsp dried oregano

8 Asda Tortilla Wraps

200g Cheddar cheese, crumbled

Salad, to serve

Pre-heat the oven to 220C/200C Fan/Gas 7. Cut the aubergine, courgettes, peppers and onion into 1cm pieces. Place in a roasting tin and drizzle over the oil. Toss everything together so all the vegetables are coated. Cook in the oven for 15 minutes.

Halve the tomatoes and scatter on top of the vegetables. Cook for another 5-10 minutes or until all the vegetables are cooked. Tip into a bowl, add the herbs, season and mix together.

Put 4 tortillas on a work surface and sprinkle with half the cheese. Divide the veg between them and sprinkle with the remaining cheese.

Put the rest of the tortillas on top and press together lightly to make quesadillas. Heat a large frying pan and gently fry the quesadillas one at a time, over a low heat. Do this for 3-4 minutes on each side until the tortillas are golden brown on the outside and the cheese has melted inside.

Cut the quesadillas into wedges and serve with salad.
