Ingredients
1 Asda Extra Special Welsh Borders Lamb Leg Joint with Garlic and Herbs
500g Asda Extra Special Sweet Vine Tomatoes
1 tbsp olive oil
4 tbsp white wine
Method
1Pre-heat the oven to 190C/170C Fan/Gas 5. Put the meat in a roasting tin and cook for 25 minutes per 500g, plus an extra 25 minutes for medium.
2Remove the lamb from the oven. Transfer to a large plate and leave to rest in a warm place, covered in foil, for about 15 minutes. Set aside the tin and keep the juices to make the sauce.
3Snip the tomatoes into six bunches but leave on the vine. Put on to a baking sheet and drizzle over the oil. Season. Bake in the oven for about 10 minutes or until the skins start to burst.
4Put the roasting tin over a medium heat and add wine. Using a wooden spoon, scrape up all the crispy bits on the base of the tin (you may need to add a little boiling water). Bring to the boil and simmer for 1 minute. There won't be a lot of sauce but it will be delicious.
5Carve the meat, adding any juices to the sauce.
6Put the lamb on a warmed serving dish and serve with the tomatoes and sauce.
