Ingredients

1 cucumber

Pinch of salt

1 garlic clove, crushed

250g Greek-style yogurt

2 tbsp fresh mint, chopped

Method

Peel the cucumber, then cut it in half lengthways and scoop out the seeds.

Grate the cucumber on the coarse side of a grater, or you can cut it into very small dice if you prefer. Put in a colander, standing over a bowl, and sprinkle with a pinch of salt. Leave for 20 minutes and the salt will draw out some of the water.

Wrap the cucumber in three layers of kitchen paper and squeeze lightly to remove more of the moisture.

Mix together the crushed garlic clove, yogurt and fresh mint.

Stir in the cucumber and chill until ready to serve.
