Ingredients

300g Asda Ready-to-Roll Shortcrust Pastry

Flour, for rolling

1 medium head broccoli, cut into small florets

2 tbsp olive oil

1 large sweet potato (or 2 small sweet potatoes), peeled and diced

1 onion, finely chopped

2 free-range eggs

300ml crème fraîche (or soured cream or milk)

Chopped fresh sage

Method

Pre-heat the oven to 200C/180C Fan/Gas 6. Roll out the pastry and line a 20cm flan tin. Prick the base and cover with foil. Weigh down with rice and bake for 10 minutes, then remove the foil and rice and bake for a further 5 minutes.

Reduce the oven to 180C/160C Fan/Gas 4. Steam the broccoli until just tender. Heat the oil in a pan and gently cook the sweet potato and onion until tender.

Whisk the eggs, crème fraîche (or soured cream or milk) and season to taste. Put the veg into the pastry case, add the egg filling, scatter with sage and bake for 30 minutes or until the top is springy and golden.
